You do not need a touch plate as it already comes with the 60th Anniversary Edition. You don't necessarily need a probe unless you plan on copying something that you have already made.

I’m guessing you are looking for 2 ply plastic…. Something that can be engraved, I would do a Google search under “two ply plastic”. If you are not pushing the machine into flex, it looks to me like something may be loose or you have some backlash.
