You can't use a flat tip bit for a vcarve inlay. Preview your pocket cut and you will see that it looks like dogbone fillets at the points and this will not work at all.

Using the "Bob" method ...I would make small test inlays. I would only change one variable at a time. Fit both halves together, and make a cross section cut to see how deep the inlay is.
SWAG. Not the most analytical method, but it works for my purposes.

I have played, and played, then played some more. I believe I have come up with a success. I did it using only MDF on MDF and had no border gaps. After cutting cross sections I end up with about a 1/16 gap at the bottom, which is perfect for what I am doing. Right now I am carving out the finish tenon in Maple, then I will set the Mortise in a solid Walnut cutting board. I will share photos shortly. Thanks again Bob and Meb
